- Husband and wife Olivier and Stéphanie are the fifth generation making wine in the region, and they’ve now been joined by their sons Antonin and Cyprien. They united vineyard parcels from both families to create the Waris-Hubert domaine.
- Their 18 hectares of vineyards in the Côte des Blancs include parcels in seven different Grands Crus (Avize, Chouilly, Cramant, Oger, Mesnil sur Oger and Aÿ) as well as several Premiers Crus and Crus de Caractère.
- They plow their vineyards with a horse in order to aerate the soils so the vine roots can push deeply into the chalk. “The more the roots reach the chalk,” Olivier explains, “the more finely the wines express and translate our personality and that of our prestigious terroirs. When we get wines of exception, it’s because they are already present on the vine.”
