A blend of Gamay, Grolleau, and Cot (Malbec). Primary fermentation with native yeast in stainless steel, then chilled and bottled with remaining residual sugar to enable secondary fermentation in bottle. Aged 17 months on lees before disgorgement, 8 g/L dosage.
